Japanese Recipe of the Week: Houtou

Houtou is a Japanese one-pot dish which vegetables, meat, and udon noodles or dumplings are simmered in miso based soup. When I make homemade udon noodles, I usually cook houtou with lots of vegetable. It’s a local specialty in Yamanashi , Japan.
